Men’s Ministry Chili Recipe!

1/4 cup Olive Oil
2 medium Yellow Onions
2 medium Green Bell Pepper
2 medium Red Bell Pepper
4 cloves Garlic (or 4 tsp of minced garlic in a jar)
2 4oz cans of Green Chilies
3-4 boneless Cubed Chicken Breast, uncooked
2 tsp Ground Cumin
1 1/2 tsp Ground Oregano
1/4 tsp Crushed Red Pepper Flakes
3 16 oz cans of Great Northern Beans, undrained
6 cups Chicken Broth
The juice of one Lime
1/4 cup Cilantro, chopped
3 cups Monterey Jack Cheese with Jalapenos
Salt and Pepper to taste
Heat olive oil in pot, add onions and saute until translucent. Add bell peppers and saute for two more minutes. Add garlic, cubed chicken, and dry seasonings and saute until slightly cooked. Add chicken broth and green chilies, bring to a boil. Add beans, then add cilantro and lime juice.. Reduce heat and simmer two hours. Add cheese to thicken. Salt and pepper to taste. Add more cheese and/or green chiles if desired.
